Gram flour made from black chickpeas (kala chana) is a highly nutritious flour prepared by cleaning, drying, and grinding whole black gram (desi chana) into a fine powder.
It is slightly different from regular besan (बेसन), which is usually made from split and dehusked yellow gram (chana dal). Kala chana flour retains more fiber because the outer layer (bran) is often included.
